Chimichurri Spiced Chicken

Serves 4

Ingredients:

  • 500g Chicken Thigh

  • Chimichurri Spice Mix

  • 1 Tbsp Olive Oil

Chimichurri Spice Mix:

  • 1 tbsp dried Parsley

  • 1 tsp dried Oregano

  • 1 tsp dried Coriander leaves

  • 1 tbsp Onion granules or flakes

  • 1 tsp dried Garlic granules

  • 1 tsp Red Chilli flakes

  • Pepper

Method:

Add Chicken thighs to a bowl.

Add Olive oil & Spice mix (homemade or pre-brought) to the chicken. You can add as much or a little of the spice mix as you like, depending on your preference.

Add chicken in a single layer to the Airfryer and cook on 200 celcius for 16-18 minutes or until cooked through (It will depend on your airfryer). Alternatively you can cook on a BBQ or in the pan on the stove.

Let the chicken rest for 5-10 minutes prior to serving.

Chicken thigh should be cooked to at least an internal temperature 74 degrees celcius. If you don’t have a thermometer the juice should be clear when cooked.

Meal Prep:

Chicken thighs make excellent meal prep as they do not dry out when reheated like chicken breast. you can make in advance and store for 3-4 days in an airtight container.
