Homemade Freezer Chips (French Fries)
Serves: 6
Ingredients
1.5 kg potatoes (You want a high-starch variety good for roasting, but if you are following a lower carb lifestlye, you can use spudlight)
Method
Peel the potatoes if preferred, or leave the skin on for extra fibre! Cut into evenly sized chips.
Add the potatoes, to a large pot and cover with cold water.
Turn on the heat to high and bring to a boil. Cook until just becoming tender but the centres are still firm.
Drain well and leave the potatoes to steam dry for 5–10 minutes.
Gently shake the potatoes in the colander to rough up the edges.
Spread the chips in a single layer on a lined baking tray and freeze for 2–3 hours, or until solid.
Transfer the frozen chips to a freezer-safe bag or container and store for up to 3 months.
