Veggie Cottage Cheese Quiche

Serves 3

Ingredients

  • 1/2 Onion, diced

  • 1 cup Spinach (Or any green), diced

  • 2 Large Mushrooms, diced

  • 1 can (400g) Artichokes

  • 80g Frozen Peas

  • 8 Eggs

  • 300g Cottage cheese

  • Salt / Pepper

(This is really a go your own way sort of recipe. You can change the veggies to any you prefer - Tomatoes, pumpkin, zucchini all work great. If you hate artichoke, skip it! Even add some feta. Yum)

Method:

Preheat the oven to 150 degrees (celsius) fan forced

In a blender or bowl, add eggs and cottage cheese with a pinch of salt and pepper and blend for 30 seconds or until smooth

With you chosen quiche dish, add all the veggies to the dish until mostly full.

Add the egg mixture to the quiche dish and mix until well combined.

Bake in the oven for 50-60 minutes or until golden brown on top and cooked through. Stick a fork in and if it comes out clean it’s ready! it will set a bit more as it cools.

Serve with a side of Sourdough, pita chips, potatoes or a fresh salad.

This dish is a perfect breakfast, lunch or dinner.
